Mango Colada Mousse by Shireen Anwer

Ingredients:

  • Mangoes chopped 1 cup
  • Eggs separated 3
  • Gelatin 1-1/2 tsp
  • Caster sugar 4 oz
  • Mango juice 1/4 cup
  • Fresh cream whipped 6 oz
  • Coconut milk 1/2 cup
  • Desiccated coconut 3 tbsp

Method:

  1. Beat egg yolks and caster sugar until light and fluffy.
  2. Now dissolve gelatin in mango juice and add in coconut milk with egg mixture.
  3. Then beat egg whites in separate bowl until stiff.
  4. Then put cream in 2 bowls and beat it.
  5. Now mix three mixtures with coconut.
  6. Now spread mango in serving bowl and put mousse mixture.
  7. Then cool it until it sets.
  8. In end, decorate with whipped cream and coconut.
