Keralan Style Vegetable Stew by Zarnak Sidhwa

Ingredients:

  • Vegetables (Carrot, Beans, Potato) 1 cup
  • Onion sliced 1
  • Green chilies 4
  • Ginger (finely chopped) 1 tsp
  • Garlic (finely chopped) 1 tsp
  • Coconut milk 2 cups
  • Cloves 2
  • Cinnamon 1 inch
  • Cardamom 1
  • Salt to taste
  • Oil 1 tbsp

To Temper:

  • Oil 1 tsp
  • Curry leaves 1

Method:

  1. Heat oil in wok.
  2. Add cloves, cardamom and cinnamon and saute.
  3. Then add onions, ginger and garlic and saute.
  4. Add chopped vegetables, little coconut milk and very little water and cook until vegetables are done.
  5. Add salt, give it mix.
  6. Then add remaining coconut milk, mix it and immediately turn off flame.
  7. For temper: Heat oil and add curry leaves.
  8. Add temper to vegetable stew and mix well.
