Kachay Gosht Ki Biryani, Khatay Tamatar Ki Chutney And Double Ka Meetha by Sara Riaz

Ingredients for Kachay Gosht Ki Biryani:

  • Mutton 1 kg
  • Meat Tenderizer 1 tbsp
  • Salt to taste
  • Coriander leaves 1 bunch
  • Mint leaves 1 bunch
  • Yogurt 375 gram
  • Ginger 1 tbsp
  • Garlic 1 tbsp
  • Red Chilli Powder 1 tbsp
  • All Spices Powder 1 tsp
  • Nutmeg, Mace 1/2 tsp
  • Small Cardamom 1/2 tsp
  • Fried Onion 1/2 cup
  • Sela Rice 1 kg
  • Whole Mix Spices 1 tbsp
  • Bay Leaf 2
  • Kewra 1 tbsp
  • Zarda Color as required

Method:

  1. Mix coriander leaves, green chill & mint leaves and blend thick.
  2. Now add ginger, garlic, salt, red chilli, crushed onion, all spices powder, nutmeg, mace, small cardamom powder and meat tenderizer, mix it and leave for marination for 2 hours.
  3. Soak water for 1 hour. Then add salt & whole mix spices and boil 2 times.
  4. Heat 1/2 cup oil in one pan and add marinated mutton. Then add chopped coriander leaves, mint leaves and whole green chillies.
  5. Add boiled rice, fried onion, zarda color & kewra on top and cook first on high flame.
  6. Then keep on simmer on low flame until mutton cooked well.
  7. Lastly, mix nicely and serve.

Ingredients for Khatay Tamatar Ki Chutney:

  • Tomato 1 kg
  • Curry Leaves 10-12
  • Cumin Seeds 1 tsp
  • Whole Red Chilli 6
  • Ginger 1 tsp
  • Garlic 1tsp
  • Turmeric Powder 1/2 tsp
  • Red Chilli 1 tsp
  • Peanuts 2 tbsp
  • Sesame Seeds 1 tbsp
  • Desiccated Coconut 2 tbsp
  • Cumin 1 tsp
  • Coriander Seeds 1 tbsp
  • Fried Onion 2 tbsp
  • Lemon Juice 2 tbsp
  • Coriander Leaves as required
  • Green Chilli 4

Method:

  1. Peel tomato and chop it.
  2. Roast peanuts, sesame seeds, cumin & coriander leaves and grind thick.
  3. Heat oil and give bhagaar of curry leaves, cumin and red chilli.
  4. Now add ginger garlic, salt, red chilli & turmeric and roast masala.
  5. Together add tomato & roasted all spices powder and cook on low flame.
  6. When roasted, add lemon juice, coriander leaves * green chillies and serve it.

Ingredients for Double Ka Meetha:

  • Sandwich Bread 1
  • Milk 1 liter
  • Sugar 2 cup
  • Zarda Color as required
  • Small Cardamom 6-8
  • Khoya 250 gram
  • Cream 1 packet
  • Almonds 1/4 cup
  • Pistachio 1/4 cup
  • Silver Paper as require

Method:

  1. Boil sugar, 2 cups water, zarda color and small cardamom.
  2. Cut the edges of bread slice, spread it on paper on day, dry it and deep fry it.
  3. Then put in syrup.
  4. Add zarda color in milk and cook little.
  5. When milk remains half, spread milk mixture on bread slice.
  6. Add khoya, cream, almond & pistachio on top and leave for simmer on low flame.
  7. Lastly, spread silver paper and serve it.
