Anda Masala And Crostini Mutton Liver by Chef Zakir

Ingredients for Crostini Mutton Liver:

  • Oil 3 tbsp
  • Oil for fry
  • Onion 1 medium
  • Celery stick 1
  • Carrot 1 small
  • Garlic 2-3 cloves
  • Mutton liver 1/2 kg
  • Lemon juice 1 tbsp
  • Tomato paste 2 tbsp
  • Parsley chopped 1/4 bunch
  • Water 1/4 cup
  • Salt to taste
  • Black pepper powder 1/4 tsp
  • French bread 1
  • Green chillies 3-4

Method:

  1. Firstly, heat oil in karahi pan, add chopped garlic and chopped onion  and cook until it becomes soft.
  2. Now add chopped mutton liver, roast them for 2-3 minutes, add water, cover it and leave for cook.
  3. After 5 to 6 minutes remove its cover, add chopped celery, chopped carrot and chopped green chilies.
  4. Together add lemon juice and tomato paste and roast it for 1 to 2 minutes.
  5. Then add parsley chopped, salt and black pepper and roast it on high flame. When they are roasted, keep them aside.
  6. Now cut french bread into slice and deep fry it in oil. When the bread becomes golden, then take it out.
  7. Then put cooked mutton liver, garnish with tomato and liver and serve.

Ingredients for Anda Masala:

  • Egg 2
  • Onion 1
  • Tomato 1
  • Green chillies 4
  • Coriander leaves as required
  • Crushed red pepper 1 tbsp
  • Turmeric 1/2 tsp
  • Oil 4 tbsp
  • Salt to taste

Method:

  1. Firstly, cut onion into slices. Together cut tomato, green chili and green coriander into small small pieces,
  2. Now beat eggs in bowl.
  3. Than heat oil in pan, add vegetables and make them soft.
  4. Now add beaten eggs, chopped red chili, turmeric and salt and cook nicely.
  5. Delicious Anda Masala is ready.
