Landi Kotal Karhai Keema, Box Patties And Fried Chicken Fitters by Shireen Anwer

Ingredients for Landi Kotal Karhai Keema:

  • Mince 1/2 kg
  • Onion 1
  • Ginger garlic 1 tbsp
  • Tomatoes 4
  • White cumin 1 tbsp
  • Coriander leaves 2 tbsp
  • All spice 1 tsp
  • Salt 1 tsp
  • Crushed red chili 2 tsp
  • Green chilies 4
  • Ginger Julian 1 tbsp
  • Oil 1/2 cup

Method:

  1. First, heat oil in one pan and fry onions until golden brown.
  2. Now put mince, ginger garlic paste, salt and chopped tomato and cover it.
  3. Then cook until mince and tomato tender.
  4. Now put crushed red chili, chopped & roasted white cumin,all spice and 1/4 cup water, cover it and cook until tender.
  5. In end, garnish with chopped green chilies, chopped green coriander and chopped ginger and serve.

Ingredients for Box Patties:

  • Chicken boiled 1 cup
  • Salt 1/2 tsp
  • Black pepper 1/2 tsp
  • Green chilies 4
  • Coriander leaves 4 tbsp
  • Spring onion 1

For White Sauce:

  • Butter 3 tbsp
  • Flour 3 tbsp
  • Milk 1 cup
  • Salt 1/2 tsp
  • Pepper 1/2 tsp
  • Mustard 1/2 tsp
  • Cheddar cheese 4 tbsp
  • Sweet corn 4 tbsp

Method:

  1. Put butter, flour, milk, salt, black pepper, mustard and sweet corns and make white sauce in one pan.
  2. Now cook until it becomes thick.
  3. Then put boiled chicken, chopped green coriander,  green chilies, chopped green onion, cheddar cheese and sweet corn and mix it.
  4. Now fill this mixture in samosa patti and deep fry it.

Ingredients for Fried Chicken Fitters:

  • Chicken 1 kg or 16 pieces
  • Salt 1 tsp
  • Onion 1
  • Garlic 2 tsp
  • Black pepper crushed  1 tsp

For Fitter Batter:

  • Flour 3/4 cup
  • Baking powder 3/4 tsp
  • Salt 3/4 tsp
  • White pepper 1/4 tsp
  • Eggs lightly beaten  2
  • Milk as required 1/2 cup
  • Oil 1 tbsp

Method:

  1. First, put chicken pieces, salt, chopped onion, chopped ginger, crushed black pepper and 1 cup water and boil for 50 minutes.
  2. Now take out and dry it.
  3. For making batter: Put flour, baking powder, salt, white pepper, beaten egg, milk and oil and beat it.
  4. Then heat oil in one pan. Now dip in batter and deep fry it.
