Fish With Cumin Paste, Peanut Butter Cookies And Gobi Aloo by Zarnak Sidhwa

Ingredients for Fish With Cumin Paste:

  • Fish fillets  1 kg
  • Ground cumin  2 tbsp
  • Oil  2 tbsp
  • Lemon juice  1 tbsp
  • Crushed red chili flakes  1/2 tsp
  • Paprika  1/2 tsp
  • Salt  1/4 tsp
  • Garlic cut into halves  3 cloves
  • Coriander chopped  3 tbsp
  • Lemon wedges  to serve with

Method:

  1. Place all ingredients except fish and coriander in blender and blend until smooth.
  2. Spread mixture evenly over fish.
  3. Bake uncovered at 180 degree C or until flakes easily with fork, 15-20 minutes.
  4. Sprinkle with coriander and serve with lemon  wedges.

Ingredients for Peanut Butter Cookies:

  • Caster sugar  1 cup
  • Vanilla essence  1 tsp
  • Peanut butter  1 cup
  • Egg  1

Method:

  1. Mix together all ingredients. Form into small balls.
  2. Put on ungreased baking tray, then  flatten down with a fork.
  3. Bake for 8 to 10 minutes at 180 degrees C.

Ingredients for Gobi Aloo:

  • Cauliflower  1  
  • Potatoes  4
  • Tomatoes paste  2 tsp
  • Salt  to taste
  • Oil  2 tsp
  • Turmeric  1/4 tsp
  • Coriander powder  1 tsp
  • Red chili powder  1 tsp
  • Cumin seeds     1 tsp

Method:

  1. Heat the oil in a pan, add the cumin seeds.
  2. Add all the vegetables and spices in and mix well.
  3. Let cook over low heat until tender.
