Carrot Cake, Liver Pate And Chocolate Hazelnut Drink by Zarnak Sidhwa

Ingredients for Carrot Cake:

  • Flour  2 cups
  • Caster sugar  2 cups
  • Carrots  3 cups
  • Baking powder  1 tsp
  • Baking soda  1 tsp
  • Ground cinnamon  1 tsp
  • Oil  1 cup
  • Eggs  4

For Frosting:

  • Cream cheese  200 gm
  • Icing sugar  4 oz
  • Vanilla essence  1/2 tsp
  • Marzipan carrots  to decorate

Method:

  1. Beat eggs, add oil, caster sugar, add the sifted flour, baking soda, baking powder and cinnamon, fold in the carrots, mix all well and put to bake in a greased and lined 9" tin.
  2. Bake at 180 degree C for 30-40 minutes or until a skewer inserted in center comes out dean.
  3. Cool on a wire rack completely before frosting.
  4. For the frosting, beat cream cheese, add icing sugar and essence and apply on the cake, decorate with carrots made of marzipan.

Ingredients for Liver Pate:

  • Chicken liver  1 kg
  • Red chili powder  1 tsp
  • Turmeric  1/4 tsp
  • Garlic, chopped  5 cloves
  • Milk  2 tbsp
  • Cream  1 packet
  • HP Sauce  5 tbsp
  • Black pepper 1 tbsp
  • Salt  1 tsp
  • Oil  1 tbsp
  • Butter  2 tbsp

Method:

  1. Marinate liver with red chili powder, turmeric, garlic, HP sauce, black pepper, salt.
  2. Let it marinate overnight or for few hours.
  3. Heat oil and butter and saute the liver in it, without its marination liquid, gradually add the liquid too and cook till liver is done, cool and then puree with milk and cream.
  4. Serve chilled with Melba toasts.

Ingredients for Chocolate Hazelnut Drink:

  • Milk  2 cups
  • Nutella  1/4 cup
  • Dark chocolate  50 gm
  • Whipped cream  to decorate
  • Chopped nuts  to decorate

Method:

  1. Heat on a low flame the chocolate, chocolate spread and milk.
  2. Stir till chocolate melts.
  3. Divide between mugs and top with whipped cream and chopped nuts.
