Sri Paye, Mix Sabzi Achar, Garlic Naan And Mint Lassi by Chef Gulzar

Ingredients For Sri Paye:

  •     Mutton Trotters 6
  •     Mutton head 1
  •     Yogurt  1 cup
  •     Red chili powder 3 tbsp
  •     Coriander powder 2 tbsp
  •     Turmeric  1 tsp
  •     Cumin powder  1 tbsp
  •     Ginger garlic paste  2 tbsp
  •     Nutmeg mace powder 1 tbsp
  •     Cloves 5-6
  •     Bay leaf 1 to 2
  •     Small cardamom 4 to 5
  •     Onion  1
  •     Oil  1 cup
  •     Salt  to taste
  •     Green chilies  for garnish
  •     Small coriander  for garnish
  •     Lemon Ginger  for garnish
  •     All spice powder  for garnish

Method:

  1. First take out the mutton brain out of its head.
  2. Pour water, turmeric, boil it well.
  3. Then put the brain, boil it for 4 to 5 minutes, filter it and keep it on a side.
  4. Put mutton trotter in a pan, add ginger garlic, onion, leave it for 5 hours.
  5. Now pour oil in another pan,  add curry leaves, cloves, cardamom then roast it.
  6. Then put remaining ginger garlic paste, yogurt, chopped coriander powder, chopped garam masala powder, red chili powder, turmeric, salt roast it well.
  7. When masala begins to ready then add sri masala and brain, let it cook on low temperature.
  8. Now make bhagar, add fried onions and put sri paye.
  9. Add green chilies, ginger, green coriander and serve it with lemon.
  10. Sri paye is ready.

Ingredients For Mix Sabzi Achar:

  •     Carrot 2 to 3
  •     Lemon 4 to 5
  •     Garlic cloves 20 cloves
  •     Cauliflower 100 gm
  •     Green chilies 20
  •     Vinegar 2 cup
  •     Red chili crushed 2 tbsp
  •     Carom seed 1/2 tsp
  •     Onion seed  1 tbsp
  •     Onion seed 1 tbsp
  •     Whole cumin 1 tbsp
  •     Fennel seed 1 tbsp
  •     Fenugreek  1/2 tsp
  •     Tartaric  1 tbsp
  •     Turmeric powder  2 tbsp
  •     Mustard oil  2 cup
  •     Salt  to taste

Method:

  1. First add carrots, cabbage, green chilies cut in julienne.
  2. Now add chopped turmeric, tatri, lemon juice, salt mix it well.
  3. Then pour vinegar, water and add vegetables.
  4. Pour olive oil in another pan, add chopped red chilies, nutmeg, onion seeds, mustard seeds, whole cumin, fennel seeds, fenugreek seeds, salt make it crispy.
  5. Then put it into vegetables mix it and take it out in a jar and keep it in bottle.

Ingredients For Garlic Naan:

  •   White flour 2 cup
  •   Yeast 1 tbsp
  •   Chopped garlic 4 to 5 cloves
  •   Sugar 1 tsp
  •   Butter  1 cup
  •   Salt to taste

Method:

  1. First pour water, add yeast, sugar mix it well and leave it.
  2. When the yeast starts to rise then put it into a mixing bowl.
  3. Now add flour, garlic, salt, put remaining butter, pour milk and knead it  well.
  4. Then cover and let it cook for 2 to 3 hours.
  5. Then take it out and knead it make it portions.
  6. Now knead it thick, make marks with fork.
  7. Now place it in oven on 200 degree C for 8 to 10 minutes.
  8. When the color appears then brush it with butter or bake it more for 1 to 2 minute.
  9. In the end take  it out and serve it hot.
