Ingredients For Kashmiri Namkeen Chicken:

  • Chicken boneless 1/2 kg
  • Fresh milk 1 cup
  • Fresh cream 1 cup
  • Oil  1 cup
  • Yogurt  1 cup
  • Onion paste  2
  • Green chiles 6
  • Almonds 10
  • Green coriander 1
  • Crushed cumin 1 tsp
  • Poppy seeds 1 tbsp
  • White pepper 1 tbsp
  • Ginger powder 2 tbsp
  • Salt to taste

Method:

  1. First pour oil in a pan, add chopped onions make them golden brown.
  2. Then put chicken boneless dry its water.
  3. Now put almonds, poppy seeds, mix it well and chop it.
  4. When the chicken water dries then add salt, yogurt, chopped ginger roast it lightly.
  5. After that add almonds, poppy seeds, white pepper roast it more.
  6. Now pour milk, fresh cream, along chopped green chilies, chopped green coriander simmer it for 10 minutes.
  7. When the water dries, oil starts to comes up then serve kashmiri namkeen chicken with hot chapati.

Ingredients For Baigan With Yogurt Sauce:

  • Eggplant  4
  • Fresh milk  1 cup
  • Yogurt  3 cup
  • Sugar  1 tsp
  • Corn flour  1 tbsp
  • Red chili  1 tbsp
  • Ginger garlic paste  1 tbsp
  • Salt to taste

For Bhagar:

  • Oil  1 cup
  • Whole red chilies 6
  • Curry leaves few
  • Fenugreek seeds 4-5
  • Cumin seeds  1 tsp

Method:

  1. First add eggplant slices, deep fry it in a pan, make it golden brown then take it out.
  2. Now pour oil in a pan, add ginger garlic paste, chopped red chilies, salt, roast it lightly add fried eggplant.
  3. After that add yogurt, corn flour, sugar, milk, beat it well.
  4. Then put them in a wide dish, put beaten yogurt on its base, add eggplant with masala, and remaining yogurt.
  5. In the end pour oil add cumin, whole red chilies, curry leaves, fenugreek then serve.

Ingredients For Bohri Chicken Cutlets:

  • Chicken boneless  1/2 kg
  • Chopped coriander 1 bunch
  • Bread crumbs 1 packet
  • Bread slice 2
  • Green onion 2
  • Egg whites  2
  • Green chilies  6
  • Black pepper 1 tsp
  • Ginger garlic paste 1 tbsp
  • Red chili powder  1 tbsp
  • White pepper  2 tbsp
  • Tomato ketchup 2 tbsp
  • Oil  to fry
  • Salt to taste

Method:

  1. First add boneless chicken, bread slices, vinegar chop it well.
  2. When the bread slices, chicken pieces are mixed well then add green chilies, chopped black pepper, chopped red chilies, salt, chopped green coriander, tomato ketchup knead it well.
  3. After that make cutlets dip it into egg white, paste bread crumbs on it.
  4. In the end pour oil shallow fry it make it golden brown.
  5. Serve the chicken cutlet with chili sauce.
