Green Masala Chicken And Cold Coffee by Zarnak Sidhwa

Ingredients For Green Masala Chicken:

  • Chicken 1 kg
  • Onion  1
  • Turmeric  1/4 tsp
  • Coriander powder  2 tsp
  • Cumin powder  1 tsp
  • Black pepper  1 tsp
  • All spice powder 1/2 tsp
  • Fennel seeds  1/2 tsp
  • Yogurt  1/4 cup
  • Cream  1/4 cup
  • Lemon juice 3-4 tbsp
  • Oil 2 tbsp
  • Bay leaf  1
  • Salt  to taste

To Grind:

  • Coriander leaves  1 bunch
  • Mint leaves  1/2 bunch
  • Green chilies  4-5
  • Onion chopped  1
  • Ginger  1 piece
  • Garlic  7-8 cloves

Method:

  1. Marinate the chicken pieces with salt, pepper powder and lemon juice for at least half an hour before preparing the curry make a smooth paste of all the ingredients under to grind.
  2. Try to avoid water while grinding or add as little as possible.
  3. Heat oil add the bay leaf and fennel seeds.
  4. Add the finely chopped onions and fry till it is golden brown.
  5. Add the ground paste and let it cook until the oil separates from the masala.
  6. Add the yogurt, turmeric powder, coriander powder, cumin powder and all spice.
  7. Fry for  about half a minute before adding the chicken.
  8. After adding the chicken, saute it with the masala for at least 3 minutes.
  9. Add required water, salt and bring it to a boil.
  10. Cover the pan and cook till the chicken is no more raw and oil starts separating from the gravy.
  11. Add the cream to the curry and mix well.

Ingredients For Cold Coffee:

  • Coffee  1 tbsp
  • Chilled milk  100 ml
  • Hot water  2 tsp
  • Sugar  1 tsp
  • Ice cubes as required

Method:

  1. Mix sugar, coffee and hot water.
  2. Blend it till it turns foamy.
  3. Add chilled milk.
  4. Blend in ice and serve immediately.
