Ingredients for Floating Island:

  • 250 ml milk
  • 1 tsp vanilla essence
  • 3 eggs, separated
  • Salt a pinch
  • Caster sugar 70 grams
  • 100 ml cream

Ingredients for Rich Bread Pudding:

  • 60 ml butter
  • 8-10 bread slices
  • 250 ml cream
  • 300 ml cream
  • 50 ml milk
  • 50 ml peaches
  • 120 grams sugar
  • 2-3 eggs beaten
  • 60 ml raisins
  • 60 ml desiccated coconut
  • 60 ml chopped nuts or walnuts
  • 3 ml ground cinnamon
  • Nutmeg 1 pinch

For Sauce:

  • 60 ml butter
  • 80 ml icing sugar
  • 1 small egg yolk

Ingredients for Peach & Cinnamon Crumble:

  • 120 grams butter
  • 120 grams brown sugar
  • Rind of 1 lemon
  • 4 egg yolks
  • 100 grams flour
  • 80 grams whole wheat flour
  • 3 ml salt
  • 8 ml baking powder
  • Peach sliced 10-15

For Topping:

  • 100 grams flour
  • 80 grams whole wheat flour
  • 3 ml ground cinnamon
  • 1 ml grated nutmeg
  • Ground cloves 1 pinch
  • 90 grams brown sugar
  • 120 grams butter
