Kabab Rice And Qeema Bharey Aloo by Chef Zakir

Ingredients for Kabab Rice:

  • Rice 1/2 kg
  • Beef mince 1/2 kg
  • Spring onion 1
  • Onion 2
  • Egg 1
  • Green chilies 3-4
  • Garlic cloves 3-4
  • Papaya paste 1 tbsp
  • Salt to taste
  • Cumin seeds 1 tsp
  • Nutmeg mace powder 1 tsp
  • Ginger 1 inch piece
  • Oil as required
  • Tomatoes 3-4
  • Chili powder 1 tsp
  • Curry leaves as required
  • Green chilies 4 -5
  • Ginger garlic paste 1 tbsp
  • Coriander 1/4 cup
  • Mint leaves 1/4 cup
  • Fried onion 1
  • Yellow color a pinch
  • Turmeric powder 1/2 tsp
  • Coriander powder 1 tsp
  • Cumin powder 1 tsp
  • All spice powder 1/2 tsp

Method:

  1. Firstly, grind beef mince, green chilies, onion, egg, green onion, garlic, papaya paste, cumin seed, 1 piece of ginger and salt in a chopper.
  2. When they are mixed, make small and long kabab from it, shallow fry them all together and keep aside.
  3. Now heat oil in separate fry pan and add ginger garlic paste. When it is slightly cooked,add chopped onion and tomato and cook it.
  4. When it becomes soft, add red chili powder, coriander, turmeric, all spice powder, curry leaves and green chilies and leave for cook with 1/2 cup water.
  5. When gravy becomes thick, so add chopped coriander, mint and fried kebabs. Boil rice in separate pan. When the remains 2/4 ,then take out from water and spread on kebabs.
  6. In end, sprinkle a pinch of yellow color, nutmeg mace and simmer it for 8 to 10 minutes.
  7. Delicious Kabab Rice are ready.

Ingredients for  Qeema Bharey Aloo:

  • Mince 250 gm
  • Onion chopped 1
  • Green chilies 1-2
  • Lemon juice 1
  • Beaten egg  2
  • Potatoes 4
  • Ginger garlic paste 1 tsp
  • Chili powder 1 tsp
  • Salt to taste
  • Cumin Seeds 1/2 tsp
  • Turmeric 1/2 tsp
  • Chaat masala 1/4 tsp
  • Flour 1/2 cup
  • Coriander leaves & Mint leaves 1/4 cup
  • All spice powder a pinch
  • Oil as required
  • Bread crumbs as required

Method:

  1. Firstly, heat oil in pan and fry onion.
  2. Then add mince, green chilies and ginger garlic paste and cook for 1 to 2 minutes.
  3. Now add salt, chopped red chili, cumin, turmeric, all spice powder and chaat masala and cook mince is tendered.
  4. Now add lemon juice, mint leaves and coriander, cook it for 1 to 2 minutes more and remove from stove.
  5. Now keep boiled & mashed potatoes in your hand, fill with mince, pack again in round shape and coat with flour. Then dip into eggs, coat with bread crumbs and shallow fry it.
  6. Tasty Qeema Bharey Aloo is ready.
