Crab In Chilli Sauce, Chicken Olive And Pan Fried Fish With Peach Noodles by Chef Zakir

Ingredients for Crab In Chilli Sauce:

  • Crab 1/2 kg
  • Ginger chopped 1
  • Garlic chopped 5-6 cloves
  • Capsicum chopped 1
  • Carrot chopped 1
  • Spring onion 2
  • Chopped green chili 3-4
  • Tomato ketchup 2 tbsp
  • Chili garlic sauce 2 tbsp
  • Worcester sauce 2 tbsp
  • Salt to taste
  • Crushed black pepper 1/2 tsp
  • Oil 3-4 tbsp
  • Oil for fry
  • Flour 5 tbsp
  • Beaten egg 1
  • Lemon juice 2 tbsp

Method:

  1. First, wash crab nicely and break with some heavy thing.
  2. After that, marinate with lemon juice, salt, flour and beaten egg.
  3. Now heat oil in karahi pan and deep fry it. When in golden in color, take out and keep it aside.
  4. Then heat oil in separate karahi pan and fry chopped ginger and garlic until golden.
  5. Then add capsicum, chopped carrot, finely chopped green chilies and finely chopped green onion and roast for 1 to 2 minutes.
  6. Now add chili garlic sauce, tomato ketchup, worcester sauce, salt and chopped black pepper and then it.
  7. In end, mix in fried crab and serve hot.

Ingredients for Chicken Olive:

  • Chicken breast 2
  • Oil 2 tbsp
  • Butter 2 tbsp
  • Onion chopped 1
  • Garlic chopped 3-4 cloves
  • Capsicum chopped 1
  • Button mushroom 1/2 cup
  • Boiled tomatoes  2
  • Worcester sauce 1 tbsp
  • Vinegar 1 tbsp
  • Green olives 1/2 cup
  • Fresh cream 3-4 tbsp
  • Salt to taste
  • Crushed black pepper 1/2 tsp
  • Parsley chopped 2 tbsp

Method:

  1. First, cut chicken layer and keep it aside.
  2. Now mix oil and butter and heat it one karahi pan. When it becomes hot, add chopped garlic.
  3. When garlic is cooked, add chicken breast. Together ass chopped onions, capsicum, button mushroom, chopped green olives and chopped tomatoes, cover it and cook it.
  4. Remove cover after 6 to 8 minutes, add salt, chopped black pepper, fresh cream, worcester sauce, chopped parsley and fruit vinegar and mix it.
  5. Then dry it on high flame and serve.

Ingredients for Pan Fried Fish With Peach Noodles:

  • Fish fillet 1/2 kg
  • Peaches 2
  • Glass noodles 1/2 packet
  • Corn flour 2 tbsp
  • Oil 4 tbsp
  • Dill as required
  • Onion 1 small
  • Spring onion 1
  • Ginger chopped 1
  • Fresh red chilies 2
  • Coriander leaves 2 tbsp
  • Fish sauce 2 tbsp
  • Lemon juice 1 tbsp
  • Sugar 1 tsp
  • Salt to taste
  • Black pepper powder 1/4 tsp

Method:

  1. Firstly, marinate fish fillet with lemon juice, salt and corn flour, shallow fry with some oil and keep it aside.
  2. Now finely chop onion, spring onion, fresh red chillies and coriander leaves.
  3. Then heat 2 tbsp oil in karahi pan, add finely chopped ginger and cook lightly. When its raw finish, add all remaining vegetables, cook for 1 to 2 minutes and add glass noodles.
  4. Then add fish sauce, sugar, salt, black pepper powder and small peach cubes and cook for 2 to 3 minutes.
  5. Now take out noodles in platter and keep fried fish on top.
  6. Keep some noodles on top, garnish with dill and serve.
