Chicken Shola, Chocolate Shrikhand And Dum Gaza by Chef Zakir

Ingredients For Dum Gaza:

  • Dum gaza  1/2 kg
  • Onion  1
  • Water  2 glasses
  • Salt  to taste
  • Ginger garlic paste  2 tbsp
  • Chili powder  1 tbsp
  • Coriander power 1 tbsp
  • Turmeric  1 tsp
  • Cumin seeds  1 tsp
  • All spice powder  1/2 tsp
  • Yogurt  250 gm
  • Ghee  1/2 cup
  • Dry fenugreek leaves  1/2 tsp
  • Ginger chopped  1 pieces

Method:

  1. First wash the dum gaza, wash it and keep it for boiling.
  2. When they become soft after boiling then keep it on a side.
  3. Keep the gravy on one side.
  4. Pour ghee in a pan, add onions make them round.
  5. Then add ginger garlic paste, then roast me.
  6. Along chopped coriander, turmeric, chopped red chilies, cumin, roast it for 1 to 2 minutes.
  7. Now put yogurt, roast it on low temperature, make the gravy thick.
  8. Then simmer it and add stock then simmer it.
  9. Remove its cover after 6 to 8 minutes.
  10. Put dry fenugreek seeds, chopped ginger then serve it.

Ingredients For Chocolate Shrikhand:

  • Yogurt  1/2 liter
  • Milk  1/2 liter
  • Custard powder  3 tbsp
  • Sugar  125 gm
  • Almond ground  100 gm
  • Cardamom powder  1.4 tsp
  • Cocoa powder  3 tbsp
  • Chocolate chip  50 gm
  • Mix fruit chopped  1 tin

Method:

  1. Pour milk, add sugar saturate it in a pan.
  2. Then add custard powder, make it thick to cook, when it becomes thick then add cocoa powder, chopped cardamom.
  3. When it becomes thick then add in a bowl and cool it.
  4. You can add ice in it.
  5. When it is cooled then take out its water and add yogurt, pistachio, almonds, chocolate chips, mix it well.

Ingredients For Chicken Shola:

  • Chicken boneless  1/2 kg
  • Rice  100 gm
  • Yellow lentils  100 gm
  • Spinach  1
  • Salt  to taste
  • Ginger 1 tbsp
  • Onion  1

Method:

  1. First pour oil add onions, make them golden brown for frying.
  2. Then add ginger garlic paste, chicken boneless, cook it well so that its color changes.
  3. Then add wet lentils, wet rice, chopped red chili, chopped coriander, chopped cumin, yogurt, cook it for 2 to 4 minutes.
  4. Then add salt, water simmer it then leave it to cook.
  5. Add rice, lentils after 15 to 20 minutes, tender it add chopped spinach, simmer it for 2 to 3 minutes.
  6. Then heat it high mix it well.
  7. When it becomes ready then take out in dish, for serving.
