Ingredients for Banana Nut Loaf

  • Butter, softened 100 gm
  • Caster Sugar 140 gm
  • Egg Beaten 1
  • Flour 225 gm
  • Baking Powder 2 tsp
  • Bananas 4
  • Walnuts chopped 85 gm
  • Milk 50 ml

Method:

  1. Beat butter, sugar and egg,then slowly mix in flour and baking powder.
  2. Peel then mash the bananas.
  3. Mow mix everything together, including the nuts flour your mixture into a greased n lined loaf thin and bake at 180 degrees C for 30-40 minutes or until a skewer comes out clean,
  4. Allow the coke to cool on a wire rock before removing from the loaf tin.

Ingredients for Lemon Chicken:

  • Chicken breast 1 kg
  • Lemon Juice 3 tbsp
  • Honey 2 tbsp
  • Olive oil 1 tbsp
  • Garlic,minced 3 cloves
  • Dried oregano 2 tsp

Method:

  1. Place chicken Breast halves into greased baking dish.
  2. Whisk lemon juice, honey, olive oil, garlic and oregano together in a bowl and pour the mixture over chicken breasts.
  3. Bake in the preheated oven at 190 degrees C for 30 minutes or until chicken is done.
  4. Baste chicken with pan juices every 15 minutes while baking.

Ingredients for Chicken Pate:

  • Cooked chicken 2 cups
  • Cream cheese 8 oz
  • Garlic minced 1 clove
  • Mayonnaise 6 tbsp
  • Fresh dil 4 tsp
  • Salt to taste
  • Lettuce and crackers to serve

Method:

  1. Combine chicken, cream cheese and garlic in food processor and blend just until smooth.
  2. Add mayonnaise, dil and salt to taste and blend again.
  3. Form into a ball and arrange on a bed of lettuce.
  4. Sprinkle with additional dill.
  5. Serve with crackers.
