Mango Bread, Suji Aur Narial Ki Tukri, Keri Do Piyaza And Keri Ka Panna by Shireen Anwer

 Ingredients For Mango Bread:

  • Flour  1-1/4 cup
  • Baking soda  1 tsp
  • Cinnamon powder  1-1/2 tsp
  • Butter 3 ounce
  • Eggs 2
  • Sugar  3/4 cup
  • Oil 1/4 cup
  • Mango  1
  • Flaked coconut  3/4 cup

Method:

  1. Keep the temperature of oven to 180 degree C.
  2. Now line the 9x9 inch loaf pan with butter paper, from its sides to bottom.
  3. Now add baking soda, chopped cinnamon filter it.
  4. Now add beaten butter, until it becomes soft.
  5. Now add egg, sugar beat it well, until it become fluffy.
  6. Then pour oil fold it in filtered ingredients. 
  7. Now add peeled and chopped mangoes.
  8. Then add chopped coconut, ready batter into a greased pan, then bake it for 45 to 50 minutes.

Ingredients For Kerry Do Piazza:

  • Mutton 1/2 kg
  • Onion  1/2 kg
  • Oil  3/4 cup
  • Ginger garlic paste 1 tbsp
  • Salt  1 1/2 tsp
  • Chili powder  1 1/2 tsp
  • Turmeric 1/2 tsp
  • Kerry  1
  • Allspice  1 tsp
  • Green chilies  4
  • Coriander leaves  2 tbsp

Method:

  1. Boil the mutton, until it becomes ready. Now keep it on a side.
  2. Pour oil add onions fry it lightly, until it is prepared , don't make it brown, then add half onions.
  3. Put another half onions, ginger garlic paste, salt, chopped red chilies, turmeric, fry it well.
  4. Now add boiled mutton, pour water cover and let it cook, until the mutton tenders.
  5. Now add chopped keri, remaining half onions, chopped garam masala, simmer it well.
  6. In the end add chopped green chilies, green coriander.

Ingredients For Suji Aur Nariyal ki Tukri:

  • Water 1/2 cup
  • Sugar 1 cup
  • Ghee 1/2 cup
  • Cardamom crushed 3/4 tsp
  • Semolina  1 cup
  • Powdered milk  1 cup
  • Desiccated coconut  1/2 cup
  • Flaked coconut  3 tbsp

Method:

  1. For making syrup, pour water, add sugar, mix it into syrup, until the syrup becomes thick.
  2. Then pour oil, add green cardamom, suji, bake it on low temperature for 10 minutes.
  3. Now add ready syrup.
  4. Then add dry flour, chopped coconut mix it immediately.
  5. Now put the mixture into already greased tray, cut it into pieces.
  6. Then add chopped coconut, garnish it and leave it to set.

Ingredients For Keri Ka Panna:

  • Keri washed 2
  • Salt 1/4 tsp
  • White cumin 1 tsp
  • Black salt  1/2 tsp
  • Sugar  3/4 cup
  • Water  as required
  • Ice  as required
  • Mint leaves  10 - 12

Method:

  1. Take a washed keri, until it becomes soft.
  2. Now filter them.
  3. Then put the keri in a blender with some salt, roasted and chopped white cumin, black salt, add sugar.
  4. Now take it out in a bowl and freeze it.
  5. If you to make 1 serving then put the blended keri paste into a glass, add ice, mint leaves then blend it well.
