Bara Masala Chicken, Coconut Cooler And Lacha Roti by Chef Gulzar

Ingredients For Bara Masala Chicken:

  • Chicken 1/2 kg
  • Garlic paste 1 tbsp
  • Tomato 3 to 4
  • Tamarind paste 1/2 cup
  • Mustard paste 1/2 tsp
  • Green chilies  4 to 5
  • Green coriander  1/2 bunch
  • Oil

Bara Masala:

  • Grated coconut 3 to 4
  • Whole coriander 1 tsp
  • Onion 1
  • Garlic 3 to 4 cloves
  • Ginger 1 inch
  • Whole red chili 5 to 6
  • Whole black pepper 1 tsp
  • Turmeric powder 1 tsp
  • Whole cumin 1/2 tsp
  • Mustard seed 1/2 tsp
  • Carom seed 1/3 tsp
  • Curry leaves 3 to 4

Method:

  1. Take a pan add coconut, whole coriander, onion, garlic, ginger, whole red chilies, whole black pepper, chopped turmeric, whole cumin, methi dana, nutmeg mace, and curry leaves roast it well.
  2. Then chop it and keep it on a side.
  3. Then take another pan pour oil heat it add fenugreek leaves, garlic paste for frying.
  4. Add chicken fry it well.
  5. When it changes color add tomatoes, mix it and cook.
  6. When the tomatoes tender then add masala with salt mix it well.
  7. Now pour water, when chicken is tendered then mix it.
  8. When chicken becomes ready, dish out it, garnish with green coriander then serve.

Ingredients For Coconut Cooler:

  • Coconut water 1 to 2 cup
  • Grated coconut 1/2 cup
  • Sliced lemon 2
  • Mint 5 to 6 leaves
  • Green chilies 2 to 3
  • Black salt 1/3 tsp
  • Ginger 1 tsp
  • Sugar syrup  2 tbsp
  • Ice cubes  as required

Method:

  1. Take a blender add coconut water, sugar syrup, chopped green chilies, mint, black salt, ginger garlic, ice cubes blend it well.
  2. Now add coconut and lemon slice then serve.

Ingredients For Lacha Roti:

  • White flour 1/2 kg
  • Butter 2 to 3 tbsp
  • Salt  to taste
  • Milk  as required

Method:

  1. Take a flour, butter, salt and mix it with milk knead it well.
  2. Now make its portions.
  3. Then roll it and make its portions.
  4. After that roll out the roti, give it steam.
  5. Lacha roti is ready.
