Vegetable & Cheese Kulcha, Khalis Yakhni And Gajerla Malai by Rida Aftab

Ingredients For Vegetable & Cheese Kulcha:

  • Flour 1/2 kg
  • Baking soda 1 pinch
  • Ghee 1/2 cup
  • Yeast 1 tbsp
  • Salt 1/2 tsp
  • Milk as required

For Making Filling:

  • Boiled potato 2
  • Chopped onion 1
  • Chopped green chili 4
  • Green coriander and mint leaves 1 cup
  • Cumin seeds 1 tsp
  • Crushed Red chili 2 tsp
  • Salt 1/2 tsp
  • Dried pomegranate seeds 4 tbsp
  • Butter as required
  • Cheddar cheese 1 cup
  • Boiled green peas 1 cup
  • Chopped capsicum 1 cup

Method:

  1. First add flour, salt, yeast, ghee and soda carbonate, pour milk knead it soft and leave it for 1 hour.
  2. Now take a boiled potato, chopped pomegranate, chopped onion, chopped green chilies, chopped green coriander and mint, cumin, salt, boiled peas, chopped capsicum, and chopped red chilies mix it well.
  3. Then make small kulchay, paste ready masala on it.
  4. Now add cheddar cheese, leave it for half an hour.
  5. After that place it in preheated oven for 30 minutes on 200 degree C.
  6. Delicious vegetable and cheese kulcha is ready.

Ingredients For Khalis Yakhni:

  • Chicken With bones 1/2 kg
  • Water 4 glasses
  • Turmeric 1/2 tsp
  • Salt 1 tsp
  • Whole black pepper 10
  • Cumin seeds  1 tsp
  • Chopped tomato 1
  • Chopped onion 1
  • Ginger 1 piece
  • Garlic clove 8
  • Black pepper 1/2 tsp
  • Green coriander 2 tbsp

Method:

  1. Take a pan add chicken, water, turmeric, salt, whole black pepper, cumin, chopped tomatoes, chopped onion and garlic cloves, cook it on low temperature.
  2. When water remains upto 3 glass, then take it out in a dish.
  3. Add chopped black pepper and green coriander then serve.

  • I made these kulchas last night. What an awesome recipe I must say. Pillow soft and extremely tasty. I made them plain without any veggies or cheese. I served them with malai chicken boti. I made these by cooking one side on tawa first and then transferring them on the grill with oven at highest broil setting till the got brown. Do give it a try. One more thing try to knead the dough soft.
