               BOMBAY DHANSIK

INGREDIENTS:

  • Chicken- 1/2 kg
  • Red lentils- 300 gm
  • Chopped ginger- 1tbsp
  • Chopped garlic- 3-4
  • Chopped onion- 1
  • Brinjal- 1
  • Potato- 1
  • Coriander- 1/2 bunch
  • Mint leaves- 1/2 bunch
  • Dry fenugreek- 1 tbsp
  • Chicken stock- 2 cup
  • Turmeric powder- 1 tsp
  • Cumin seed- 1 tsp
  • Coriander powder- 1tsp
  • Red chili powder- 1 tbsp
  • Chopped tomatoes- 2
  • Tarmind powder- 1/2 cup
  • Lemon juice- 1 tbsp
  • Brown sugar- 1tbsp
  • Oil- 3-4 tbsp
  • Salt- to taste
FOR DHANSIK POWDER:
  • All spice powder- 1 tbsp
  • Star anise- 2-3
  • Nutmeg- 1

METHOD:

FOR MAKING DHANSIK POWDER:
  1. Blend together all spice powder, star anise and nutmeg in a blender
FOR MAKING GRAM AND VEGETABLE:
  1. Infused red lentils for half hour.
  2. Now add red lentil gram, water, onion, brinjal, potato, turmeric powder, garlic, coriander, fenugreek, mint leave and cook until vegetables and gram fester.
  3. Now heat oil in a pan and fry chopped garlic and ginger in it, now add tomatoes in it and grill.
  4. Now add cumin seed, corinader powder, red chili powder and salt in it and cook all together.
  5. Now add already cooked gram in this materail along with chicken stock and dhansik powder and cook, then add tarmind powder in it.
  6. Dish out when everything is ully grilled and serve with lemon juice and coriander garnishing.

                           HAREERA

INGREDIENTS:

  • Milk- 500 gm
  • Almond paste- 2-3 tbsp
  • Saago dana- 2-3 tbsp
  • Cloves- 3-4
  • Green cardamoms- 3-4
  • Solid milk(Khoya)- 125 gm
  • Sugar- as required
  • Clarified butter- 2 tbsp

METHOD:

  1. Cook milk, khoya, almomd paste, saago dana and sugar on a light lame until milk becomes thick.
  2. Now fry green cardamoms and cloves in clarified butter.
  3. Dish out harerra in a a bowl and stock with cloves and cardamoms.
  4. Garnish with almonds.
