Rang Dar Biryani And Fried Dhaga Kabab by Chef Zakir

Ingredients for Rung Dar Biryani:

  • Chicken 1/2 kg
  • Rice 300 gm
  • Potatoes  1/2 kg
  • Salt  to taste
  • Ginger garlic paste  2 tbsp
  • Onion  2
  • Yogurt  250 gm
  • Mix whole spices  as required
  • Plum  50 gm
  • Turmeric  2 tsp
  • Coriander leaves  1/4 bunch
  • Mint leaves  1/4 bunch
  • Green chilies  3-4
  • Kewra  2 tbsp
  • Red food color  few drops
  • Green food color  few drops
  • Ghee  1/2 cup
  • Tomatoes  3
  • Chili powder  1 tsp
  • Ghee 1/4 cup

Method:

  1. Now pour water in a pan, add salt and rice in a pan.
  2. Then remove the cover of chicken pan and turn off the stove.
  3. Then put the fried potatoes, Add green chilies, green coriander, chopped mint, plum, tomatoes.
  4. Now add boiled rice, spread it before it remains to 1/4th. After few minutes spread the rice.
  5. When all the rice are spread, then put the kewra, few drops of red food color, green food color, ghee, and simmer it for 12 to 16 minutes.
  6. Rung dar biryani is ready.

Ingredients for Fried Dhaga Kabab:

  • Mince  1/2 kg
  • Salt   to taste
  • Garlic  2 cloves
  • Ginger  2 inches piece
  • Chili powder  1 tbsp
  • Onion  1 medium
  • Onion fried  1
  • All spice  1 tbsp
  • Nutmeg mace  1/2 tsp
  • Cumin seeds  1 tsp
  • Green chilies  2-3
  • Coriander leaves  1/4 bunch
  • Kidney's fat  100 gm
  • String  as required
  • Butter  100 gm
  • Papaya paste  2 tbsp
  • Meat tenderizer (Kachri powder)  1 tbsp

Method:

  1. First put the mince, ginger, garlic, onion, papaya paste, kachri powder in a chopper, grind it well.
  2. Now add garam masala, salt, chopped cumin, chopped green chilies, fried brown onions, green coriander, meat tenderizer in a chopper, keeping in mind that the mince should remain soft.
  3. Now take the BBQ sticks, make narrow kababs, and fold the thread.
  4. Then give steam with coals.
  5. When the kababs are fried from all sides, then put the butter in separate pan, add nutmeg mace powder, open its thread and keep its temperature high for frying.
  6. Delicious fried dhaga kabab is ready.
