Pasta Carbonara, Chana Daal Tarkay Wali And Darbari Fish by Chef Zakir

Ingredients for Pasta Carbonara:

  • Oil  2 tbsp
  • Butter  1 tbsp
  • Beef undercut  250 gm
  • Egg beaten  2
  • Milk  1/4 cup
  • Thyme  1 tsp
  • Shell pasta boiled  1/2 packet
  • Parmesan cheese  50 gm
  • Salt  to taste
  • Crushed black pepper 1/2 tsp
  • Fresh cream  2-3 tbsp

Method:

  1. First, heat oil and butter in one karahi, add chopped beef undercut and fry until golden color appears.
  2. Now mix fresh cream, milk, egg, thyme, salt and crushed black pepper in one bowl.
  3. Now add boiled pasta in beef karahi pan. Add egg and milk mixture gradually and stir it fast.
  4. Now add half parmesan cheese, mix it fast and takeout in platter.
  5. Now put remaining parmesan cheese on top and serve.

Ingredients for Chana Daal Tarkay Wali:

  • Gram lentils boiled  250 gm
  • Bottle gourd  1
  • Ghee  3-4 tbsp
  • Oil  3-4 tbsp
  • Onion  1
  • Cinnamon  2-3 sticks
  • Green cardamom  6-8
  • Dry red chilies  4-5
  • Turmeric  1/2 tsp
  • Chili powder 1 tsp
  • Salt to taste
  • Water  1/2 cup
  • Bay leaves  2
  • Desiccated coconut 3-4 tbsp
  • Tomatoes boiled  3
  • Coriander leaves  2 tbsp
  • Green chilies  3-4
  • Onion seeds  1/2 tsp
  • Mustard seeds  1/2 tsp
  • Cumin seeds  1 tsp
  • Curry leaves  1 stalk
  • Garlic sliced  4 cloves

Method:

  1. First heat oil in one karahi pan, add chopped onions and cook until it becomes soft.
  2. Now add turmeric, chopped red chili, chopped coconut, green coriander, and cinnamon and mix for 2 minutes.
  3. Then add boiled and chopped tomatoes, chopped bottle gourd, boiled gram lentils, half cup water and bay leaves, cover it and cook it.
  4. Remove its cover after 10 to 12 minutes, add green coriander and green chili, mix it well and turn off the stove.
  5. Heat ghee in separate pan, add mustard seeds, onion seeds, curry leaves, dry red chilies, garlic cloves and whole cumin, make tarka and give tarka to daal.

Ingredients to Darbari Fish:

  • Fish  1/2 kg
  • Ginger garlic paste  2 tbsp
  • Salt  to taste
  • Cumin powder  1 tsp
  • Coriander powder  1 tsp
  • All spice powder  1/ tsp
  • Chili powder  1 tsp
  • Tomato paste  2 tbsp
  • Red food color  1-2 drops
  • Lemon juice  1 tbsp
  • Water  3-4 tbsp
  • Oil  1/4 cup
  • Flour  1/4 cup
  • Coriander leaves  2 tbsp
  • Mint leaves  2 tbsp
  • Carom seeds  1/2 tsp

Method:

  1. First, wash fish and cut in cubes.
  2. Now add ginger garlic paste, salt and lemon juice in one bowl, marinate fish and keep it aside.
  3. Now add cumin, chopped coriander, all spice powder, chopped red chili, tomato paste, red food color, carom seeds, green coriander, mint and flour, mix it well and make thick paste with water.
  4. Then add marinated fish and marinate it nicely.
  5. How heat oil and fry it lightly on one side.
  6. When golden in color, then fry it on another side.
  7. When ready, serve with any chutney or sauce.
