Pasta Pizza, Ravioli And Garlic Fries by Chef Gulzar

Ingredients For Pasta Pizza:

For Dough:

  • White flour 700 gm
  • Yeast 2 tbsp
  • Sugar  2 tbsp
  • Baking powder 1 tbsp
  • Egg 1
  • Olive oil  1 tsp
  • Lukewarm milk as required
  • Salt to taste

For Pasta:

  • Macaroni 1/2 packet
  • Beef mince 200 gm
  • Onion chopped 1
  • Garlic paste 1 tbsp
  • Black pepper  1/2 tsp
  • Thyme  1 pinch
  • Tomato ketchup  3 to 4 tbsp
  • Soya sauce
  • Olive oil
  • Salt

For Pizza Topping:

  • Pizza sauce  1/2 cup
  • Sliced olive  1/2 cup
  • Slice mushrooms  1 cup
  • Grated mozzarella 500 gm
  • Oregano 1/2 tsp
  • Capsicum 1
  • Tomato  1
  • Butter  as required

Method:

  1. For dough: Make the water warm, add yeast, sugar mix it well and leave it for 15 minutes.
  2. Now take a flour, add salt, baking powder, olive oil, egg and yeast knead it in a warm water place it in a warm place for 3 to 4 hours.
  3. When the dough rises then take it out and fold it well.
  4. When the dough becomes ready.
  5. Now pour butter on a baking tray, and spread the pizza dough.
  6. For making pasta: Pour oil or water heat it.
  7. Then add spaghetti or macaroni boil it for 10 minutes, take it out and cool it.
  8. When the temperature becomes normal then paste oil on it.
  9. Then pour oil in a pan, add olive oil, garlic paste, mince roast it well.
  10. When its color changes then add chopped onions, chopped black pepper, thyme, tomato ketchup, soya sauce, salt, mix it well.
  11. Then put spaghetti or macaroni mix it well remove it from stove.

Ingredients For Ravioli:

Ravioli Stripes:

  • White flour 250 gm
  • Eggs  2
  • Salt to taste

For Filling:

  • Chicken mince 250 gm
  • Garlic paste 1 tsp
  • Black pepper 1/2 tsp
  • White pepper 1 tsp
  • Chopped carrot  1/2 cup
  • Green onion 1 stick
  • Chopped onion 1
  • Eggs  1 to 2
  • Oil  as required
  • Salt to taste

Cream Sauce:

  • White flour  3 to 4 tbsp
  • Chicken stock 1 cup
  • Milk 1 cup
  • Butter 1/2 cup
  • Mushrooms  4 to 5
  • Boiled garlic  4 to 5 cloves

Method:

  1. First put flour, egg and salt knead it hard.
  2. Now knead it and keep it on a side.
  3. For making cream sauce: Take a pan, add butter, flour, roast it for 2 to 3 minutes.
  4. Now add stock, garlic and mushrooms. then roast it again for 2 to 3 minutes.
  5. Now add milk, and stir it continuously.
  6. When it becomes thick then remove it from stove.
  7. For making filling: Take a bowl add chicken mince, garlic paste, chopped black pepper, white pepper powder, carrot, green onion, onion, egg, salt, mix it well.
  8. Put the filling mixture on every step of ravioli stir piece.
  9. Put another strip on it and paste egg for closing it.
  10. Give it shape as u like too give.
  11. Then take a a water, heat it, boil it for 8 to 10 minutes.
  12. Filter it and keep it on a side.
  13. Now place it in a serving dish, add ravioli. then put cream sauce on it then serve.

Garlic Fries:

  • Potato 1/2 kg
  • Corn flour as required
  • Garlic powder 1 tsp
  • Oil for fry
  • Salt  to taste

Method:

  1. First add potatoes, peel its skin, cut it into thick slices.
  2. After that heat it for 1 to2 minutes boil it and take it out and dry it.
  3. Then add corn flour, mix it and filter it.
  4. Now pour oil add potatoes for frying.
  5. Now take it out and add garlic powder, sprinkle salt and then serve.
