Chocolate Orange Cheesecake

Ingredients for Base:

  • Ginger biscuits 125 gram
  • Butter 60 gram (softened)
  • Caster sugar 2 tsp

Ingredients for Filling:

  • Cream cheese 450 gram
  • Belgian chocolate 200 gram
  • Sugar 100 gram
  • Egg yolks 3
  • Vanilla 1 tsp
  • Orange zest of 1 orange
  • Orange extract 3/4 tsp
  • Cream 100 ml
  • Cocoa 1 tsp
  • Corn flour 1 tbsp

Method:

  1. Combine cookie crumbs along with butter and sugar and press down on the base of the tin.
  2. Cover the tin with foil to avoid water entering the tin.
  3. Place the prepared tin into the fridge to cool.
  4. Preheat oven to 180 degrees C.
  5. Melt chocolate on a double boiler until smooth.
  6. Keep aside to cool.
  7. In a bowl whisk the cream cheese until smooth, then add the sugar and whisk well.
  8. Add the eggs one by one beating well after every addition, the add the egg yolks and vanilla extract, orange extract and zest, whisk well to combine.
  9. Add the com starch along with the cocoa dissolved in water and beat well.
  10. Fold in the cream and then the chocolate until you have a smooth batter.
  11. Pour onto the prepared base.
  12. Place in a roasting pan and pour hot water till about 1 inch of the tin.
  13. Place in oven and bake for 50 minutes.
  14. Cool on a wire rack.
  15. Drizzle chocolate on top and dust with cocoa to finish.
  16. Cool for at least 4 hours before serving.
