Rainbow Cake Recipe

Rainbow Cake is delicious and different cake. Make this cake at home and surprise your children.

Ingredients:

For Cake:

  • Plain flour 3 cups
  • Baking powder 2 tbsp
  • Unsalted butter 225 gm
  • Milk 1-1/2 cups
  • Sugar 2-1/3 cups
  • Egg whites 5
  • Vanilla essence 1 tbsp
  • Salt 1/2 tsp
  • Red, orange, blue, green, yellow and purple yellow color 1 tsp each

For Frosting:

  • Cream cheese 600 gm
  • White chocolate 450 gm
  • Icing sugar 2 cups
  • Butter 60 gm
  • Vanilla essence 1 tbsp
  • M&Ms or smarties 3 packets

Direction:

  1. Preheat oven on 180 degrees C gas mark 4.
  2. Grease 6 9-inch round cake tin, line with baking paper and grease it again.
  3. For cake: Now sieve plain flour, salt and baking powder and keep it aside.
  4. Then beat sugar and butter in bowl until creamy and smooth.
  5. Now add eggs whites slowly and beat it nicely until combined.
  6. Then add vanilla essence, flour and milk and beat it nicely.
  7. Now divide batter in 6 bowls, put each color in each bowl (one color in one bowl only) and mix it.
  8. Then transfer batter in all greased pan and bake them in batches in preheated oven for 12 to 15 minutes.
  9. Now remove from oven and cool it for 10 minutes.
  10. Then remove from tin, keep on wire rack, cool it completely and remove baking paper.
  11. For frosting: Now put chocolate on double boiler, melt until smooth and keep it aside for cool.
  12. In other bowl, add cream cheese, butter and vanilla essence and beat until creamy.
  13. Now add icing sugar and beat until combined.
  14. Then add melted chocolate and beat it more.
  15. For assemble: Keep any color cake on platter and spread frosting.
  16. Then keep other cake, spread frosting and carry on till last cake.
  17. Then cover whole cake with remaining frosting and decorate with M&Ms or smarties.
  18. Then cut into slices and serve.

Rainbow Cake is delicious cake. Plain flour, baking powder, egg whites, sugar, milk & butter are beaten to together and mixed with 6 colors. Then baked and cooled. Then assembled in layers, covered with cream cheese, white chocolate & butter frosting, decorated with M&Ms or smarties and served in slices.
