Raspberry Mint Honey

  • 4 cups honey
  • 2 cups canned red raspberries, drained
  • 4 ounces fresh mint leaves


  1. Combine honey, raspberries and mint leaves in a pan over medium heat.
  2. Stir mixture occasionally until honey simmers, about 5 minutes. Then let it simmer for about 20 minutes.
  3. Pour the mixture through a fine strainer and discard pulp and mint leaves.
  4. Cool and serve
  5. Can be served with scones, crumpets or muffins
