Nutty Pilaf by Chef Zakir

Ingredients:

  • Oil 1/4 cup
  • Onion chopped 1
  • Carrot 1
  • Bay leaf 1
  • Garlic chopped 2-3 cloves
  • Green cardamom 3-4
  • Walnut 25 gram
  • Almond 25 gram
  • Cashew nut 25 gram
  • Coriander leaves 1/4 bunch
  • Rice 300 gram
  • Cumin seeds 1 tsp
  • Crushed black pepper 1 tsp
  • Onion seeds 1 tsp
  • Crushed coriander 1 tbsp
  • Chicken stock 1-1/2 glass
  • Salt to taste

Method:

  1. Firstly, heat oil, add cumin seeds, chopped coriander, onion seeds, bay leaf & green cardamom and roast for few seconds.
  2. Then add chopped onion, chopped carrot and cook nicely for 2 to 3 minutes.
  3. Add chicken stock, chopped almond, walnut and cashew nut.
  4. When stock becomes hot, add soaked rice, salt & coriander leaves and cook.
  5. When rice comes on top, mix it and keep on simmer for 8 to 10 minutes. Spicy nutty pilaf is ready.
