Nacho Cheese Soup

Ingredients:

  • 1 can whole kernel corn
  • 1 can diced tomatoes
  • green chilies
  • 1 package Au Gratin Potatoes
  • 2 cups skim milk
  • 1 cup light Velveeta cheese, cubed
  • hot pepper sauce, to taste
  • 2 cups water

Method:

  1. In a large pot, combine the contents of the Au Gratin potatoes package, corn, tomatoes, and water.
  2. Mix well and bring to a boil.
  3. Reduce heat, cover and simmer for 20 minutes or until potatoes are tender.
  4. Add milk, cheese, and hot sauce.
  5. Cook and stir frequently until the cheese is completely melted.
