Rajhistani Pulao

Ingredients

  • 300 grams rice
  • 1 carrot 
  • 2 tomatoes
  • 2 medium onions
  • 2 cardamoms 
  • 4 small cardamoms
  • ¼ cup clarified butter 
  • 50 almonds and pistachios
  • 2 to 3 cinnamon sticks
  • 8 to 10 cloves
  • 1 ½ glass chicken stock
  • Red and green food color
  • 2 tbsp kewra 
  • 1 tbsp fennel seeds
  • Salt to taste

Methods

  1. Finely slice 2 medium onions.
  2. In a pan, heat ¼ cup clarified butter and stir onion, 2 to 3 cinnamon stick, 2 big cardamoms, 4 small cardamoms, and 8 to 10 cloves.
  3. When onions is golden brown, add 1 ½ glass chicken stock and 1 tbsp fennel seeds.
  4. Also add 50 grams almonds and pistachios, salt to taste and 300 grams rice.
  5. When rice is ¾ cooked, add green and red food color and 2 tbsp kewra. 
  6. Also add 2 tomatoes and a carrot.
  7. Allow simmering in a covered pan for 8 to 10 minutes. Delicious Rajhistani Pulao is ready to serve.


Chili Lemon Fried Wings

Ingredients

  • ½ chicken wings with skin
  • 1 egg 
  • juice of 2 lemon
  • ½ cup plain flour
  • Oil for frying
  • ½ tsp black pepper powder
  • 2 tbsp garlic paste
  • 2 tbsp red chili flakes
  • salt to taste.

Method

  1. Cut each chicken wing into 2 pieces.
  2. Marinate chicken wings with salt to taste, ½ tsp black pepper powder, 2 tbsp red chili flakes, 2 tbsp garlic paste and a beaten egg.
  3. Coat chicken wings with flour and deep fry.
  4. Serve when the color has turned golden brown.
