Ingredients:

  • 2 cups pumpkin grated or ½ kg.
  • Few tbsp. milk (optional).
  • 1 to 2 tbsp. ghee.
  • Generous pinch cardamom powder.
  • ¼ cup + 1 to 2 tbsp. sugar (adjust slightly).
  • Few cashews or pistachios chopped.

Method:

  1. Take a sauce pan and add ghee in it.
  2. Now fry the nuts till they become golden. Take them out and keep them aside.
  3. In this pan now add grated pumpkin and cook till the raw smell goes away. It will take 4 to 5 minutes.
  4. Now add milk and cardamom powder and let it cook.
  5. Cook until all the milk gets absorbed.
  6. Now add sugar and let it cook, cook till it is dissolved completely.
  7. Keep cooking until the halwa becomes thick in consistency.
  8. Now garnish with the fried nuts.
