- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, crushed
- 425g can peeled tomatoes, crushed
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp sugar
- Heat oil in medium pan.
- Add onion and stir-fry over low heat for 5 minutes or until very soft.
- Add crushed garlic and cook for 1 minute.
- Stir in tomato, herbs and sugar and cook over low heat for 10 minutes until reduced and thickened.
- Add salt and pepper, to taste.
- Cool before use.
