Chicken Haleem, Gulzar Special Haleem Masala And Wild Leechy Drink by Chef Gulzar

Ingredients Chicken Haleem:

  • Chicken (boneless) 1 kg
  • Yogurt  250 gm
  • Rice 50 gm
  • Green gram lentil 50 gm
  • Red lentil 50 gm
  • Yellow lentil 50 gm
  • Gram lentil  50 gm
  • Wheat 50 gm
  • Jaw 25 gm
  • Haleem Masala 3 tbsp
  • Onion 2
  • Garlic paste 2 tbsp
  • Ginger paste 2 tbsp
  • Gulzar special haleem masala 3 tbsp
  • Onion 2
  • Garlic paste 2 tbsp
  • Ginger paste 2 tbsp
  • Green chilies 8-10
  • Coriander leaves 1/2 bunch
  • Mint leaves 1/2 bunch
  • Lemons as required
  • Chopped ginger as required
  • Oil 1 cup
  • Salt to taste
  • Brown onion, Chat masala to garnish

Method:

  1. First wash all lentils separately and keep dipped in water overnight.
  2. Then boil wheat, jaw and gram lentil.
  3. Now cut small pieces of chicken.
  4. For gravy (korma): In a separate pan heat cooking oil and saute 2 onions till gets brown now.
  5. Now add ginger garlic paste in chicken pieces and mix properly.  
  6. Then add in gulzar special haleem masala salt, whole green chilies, blended yogurt. Now mix all ingredients well and add water as required and leave it until cooked well.
  7. When chicken cooked well  and the ingredients dries, remove from flame.
  8. Korma is ready.
  9. For preparing lentils: Now add water in a separate cooking pot add all lentils, rice and pulses together and mix properly cover and let it cook when done.
  10. For mixing: Add lentil mixture and korma in chopper and blender it.
  11. Then put this in one big pot, add water, cook on low flame and stir continuously.
  12. When all ingredients is nicely mixed and cooked well, remove from flame and give baghaar of onion.
  13. Take out haleem in one serving bowl and garnish with brown onion, chopped garlic, coriander leaves, mint leaves, chat masala & lemons
  14. Chicken haleem is ready.

Ingredients for Gulzar Special Haleem Masala:

  • Cumin seeds 4 tbsp
  • Black cumin seeds 2 tbsp
  • Coriander seeds 8 tbsp
  • Cardamom 2 tbsp
  • Turmeric powder 2 tbsp
  • Red chillies 150 gram
  • Nutmeg and mace 1 tsp
  • Cloves 5-6
  • Cinnamon 4-5 sticks
  • Tartary 1 tbsp

Method:

  1. Add coriander seeds, cardamom, red chillies, cloves & cinnamon in one pan and roast it.
  2. Then grind with cumin seeds, black cumin seeds, nutmeg, mace & tartary.
  3. Masala is ready.
  4. Now keep this masala in air tight box.
  5. This masala is for 5 kg haleem.

Ingredients for Wild Leechy Drink:

  • Lychee 1 cup
  • Lychee juice 1 cup
  • Sugar 4 tsp
  • Crushed ice as required
  • Mint leaves to garnish

Method:

  1. Put lychee in one jag and add lychee juice.
  2. Then add sugar and crushed ice and blend it.
  3. Take out in one glass, garnish with mint leaves and serve it.
