Purani Delhi Ki Gosht Ki Biryani by Shireen Anwer

Ingredients:

  • Mutton 1/2 kg
  • Onion 2
  • Garlic paste 2 tsp
  • Chili powder 2 tsp
  • Whole spices 1 tbsp
  • Yogurt 3/4 cup
  • Kewra water 1 tsp
  • Yellow color pinch
  • Saffron 1/4 tsp
  • Salt 2 tsp
  • Oil 1/2 cup
  • Rice 1/2 kg
  • Ginger julienne 1 tbsp
  • Green chilies 6

Method:

  1. Heat oil, put mutton, onion, garlic paste, chili powder and salt and fry for 10 minutes.
  2. Now put 1 cup water, cover it and cook for 20 minutes until meat is cooked 90 percent and half gravy remains.
  3. For assemble: Put yogurt, ginger julienne, green chilies, saffron and yellow color in one bowl and mix it.
  4. Now put mixture on mutton.
  5. Then put soaked & boiled rice and spread it.
  6. Now sprinkle kewra water.
  7. Then put 2 tbsp ghee and 1/4 cup water, cover it nicely and keep on simmer for 20 minutes.
  8. In end, mix it and serve hot.
