Ingredients:

  • Bitter gourd 1/2 kg
  • Onion finely chopped 4
  • Red chilies crushed 1 tbsp
  • Turmeric 1 tsp
  • Ginger garlic paste 1 tbsp
  • Cloves 1 tsp
  • Coriander powder 2 tbsp
  • Fennel seeds 1 tsp
  • Tamarind pulp 1/2 cup
  • Brown sugar 1 tbsp
  • Curry leaves few
  • Salt to taste
  • Tomato paste 2 tbsp
  • Mustard oil 1 cup

To Wash bitter Gourd:

  • Turmeric 1 tsp
  • Tamarind pulp 1 tbsp
  • Salt 1 tsp
  • Brown sugar 1 tsp

Method:

  1. Peel bitter gourd and mark cut.
  2. Put turmeric, tamarind pulp, salt and brown sugar without washing it.
  3. Then wash after 10 minutes.
  4. Bitter will be finish.
  5. Now heat mustard oil and fry onion until light pink.
  6. Then add ginger garlic paste, red chili, turmeric, coriander powder, fennel seeds and salt and roast it lightly.
  7. Then fill little little masala in washed bitter gourd and tie with thread.
  8. Now heat oil in frying pan and fry masalay bharay karelay.
  9. Then put tomato paste, tamarind pulp, brown sugar and fried bitter gourd in remaining onion and simmer it on low flame.
  10. Masalay bharay karelay is ready.
