Bhuna Masala Achar

Ingredients:

  • Finely chopped carrots 1 cup
  • Oil 1/2 liter
  • Vinegar 1/2 cup
  • Round red chili 50 gm
  • Whole coriander 2 tbsp
  • Cumin 2 tbsp
  • Fenugreek seeds 2 tbsp
  • Mustard 2 tbsp
  • Onion seeds 1 tsp
  • Garlic chopped 4 tbsp
  • Turmeric 1 tbsp
  • Salt 1 tbsp
  • Fennel 2 tbsp

Method:

  1. Roast red chili, whole coriander, cumin, fenugreek seeds, mustard and fennel and grind it.
  2. Now heat oil, chop carrot, roasted masala, turmeric, salt and garlic, mix it, cool it and store in jar.
  3. Also add remaining oil.

Bhuna Masala Achar is similar to gajar ka achar. Carrots and roasted masala are used to prepared this dish. Served with roti or sweet rice.
