Ingredients:

  • Mutton 1/2 kg
  • Yogurt 250 gm
  • Ghee 250 gm
  • Big cardamom 2
  • Fried onion 2
  • Small cardamom 4
  • Cloves 4
  • Green chilies 6
  • Stock 2 cups
  • Whole black pepper 1 tsp
  • Salt 1 tsp
  • Red chili powder 1/2 tsp
  • Small cardamom powder 1/2 tsp
  • Fennel powder 2 tsp
  • Dry ginger 1/4 tsp
  • Garlic 2 tsp
  • Mint leaves 2 tbsp

Method:

  1. Put mutton in chopper and chop it finely.
  2. Now put salt, small cardamom powder, fennel powder and red chili powder and make balls.
  3. Then cook stock in pan, put balls and cook on low flame.
  4. Then heat ghee, put small cardamom, fried onion, yogurt, black pepper, cloves, garlic, remaining fennel powder and big cardamom and roast it nicely.
  5. Now put stock, koftay and green chilies and cook on low flame for 30 minutes.
  6. Then close stove, put dry ginger and mint leaves and serve.

Gushtaba is delicious dish. It is Kashmiri dish. Mutton is chopped, then made kofaty with it and cooked with gravy. Serve with Kashmiri naan.
