Spicy scrumbled eggs

Ingredients:

  • 1 medium potato; diced
  • 1 medium onion; chopped finely
  • 2 tomatoes; blanched, peeled and chopped finely
  • 1/2 cup chopped chives
  • 2 cloves garlic; minced
  • 1 inch ginger; grated
  • 2 chilies; chopped finely
  • 1 tbsp coriander / cumin powder
  • 1/2 tbsp turmeric
  • 3 eggs; beaten
  • 1/2 cup chopped coriander leaves
  • salt - to taste
  • 2 tbsp olive oil

Method:

  1. Heat oil, and sauté the potatoes until cooked, remove and set aside.
  2. Fry the onions until golden brown, add garlic, ginger and tomatoes. Fry for a few minutes.
  3. Add cumin/coriander and turmeric powder, stir and fry for 1 minute.
  4. Add potatoes, salt, chives and stir and cook for A minutes.
  5. Add eggs, stir until cooked.
  6. Add coriander, mix and serve hot.
