Spicy Chicken Pasta

Ingredients:
- 8 oz pasta
- 2 boneless chicken breasts
- 1 red or green bell pepper, diced
- 1 red tomato, optional
- 6 large olives, sliced
- 1 clove fresh garlic, minced or crushed
- Ground fresh chili paste
- 1-2 tbsp plus 1 tsp chili oil
- Cheese, grated
- Cooking Oil
- Chicken Stock
Method:
- Cook pasta according to directions, drain and set aside.
- Cut chicken into 1 inch squares and move to a bowl.
- Add chili oil to chicken and toss to marinate then set aside.
- Heat a large pan with cooking oil.
- Add chicken to pan and sauté on medium heat until done.
- Add bell peppers, tomato and garlic then sauté until soft.
- Pour a little (about ¼ cup) chicken stock to keep pan from drying out.
- Then add olives.
- Sprinkle cheese on top to taste.
- Add cooked pasta to chicken mixture and toss to combine.
- Serve hot.
