Mango Peanut Chaat, Spicy Lassi And Besan Ka Paratha by Chef Samina

Ingredients for Mango Peanut Chaat:

  • Mango 1 kg
  • Cucumber 1
  • Peanut 3/4 cup
  • Onion 1
  • Chaat masala as required
  • Black pepper powder 1/2 tsp
  • Dry ginger 1 pinch
  • Green chilli 2-3
  • Fine chopped mint as required
  • Lemon juice 1-1/2 tbsp
  • Brown sugar 2 tbsp
  • Roasted cumin powder 1/2 tsp
  • Dry mango 1-1/2 tsp
  • Salt to taste

Method:

  1. Cut mango into cubes.
  2. Take out seeds of cucumber and cut into cubes.
  3. Also cut onion into cubes.
  4. Now add mint, chopped green chilli, brown sugar, roasted cumin powder, dry mango, salt, black pepper, chaat masala and lemon juice and mix all ingredients well.
  5. Chilli it, add fried peanut and serve.

Ingredients for Spicy Lassi:

  • Yogurt 1/2 kg
  • Water 1 cup
  • Milk 1 cup
  • Ginger 1 small
  • Green chilli 1
  • Cumin seeds 3/4 tsp
  • Salt to taste
  • Brown sugar 2-3 tbsp
  • Mint few leaves

Method:

  1. In one blender, add water, milk, yogurt, ginger, green chilli, cumin seeds, salt and brown sugar and blend well.
  2. Take out in glass and serve chill.

Ingredients for Besan Ka Paratha:

  • Gram flour 4 cup
  • White plain flour 2 cup
  • Coriander, cumin seeds 1 tbsp
  • Crushed red chilli 1 tbsp
  • Salt 2 tsp
  • Ghee for frying
  • Dry fenugreek 1-1/2 tsp
  • Carom seeds 1 tsp
  • Turmeric powder 1/2 tsp
  • Green chilli 2-3
  • Coriander 1/2 bunch
  • Onion 1

Method:

  • Add plain flour, salt, coriander seeds, cumin seeds, crushed red chilli, salt, ghee, dry fenugreek, carom seeds, turmeric, onion, coriander and green chilli in gram flour and knead with water.
  • After it leave for few minutes.
  • Now make portions and roll it. Then coat with ghee, make in shape of cone and again roll it.
  • Fry in hot ghee and serve it.
