Ingredients for Paan Paira:

  • Khoya 1/2 kg
  • Sugar 250 gm
  • Cardamom powder 1/2 tsp
  • Red food color 1 tsp
  • Dry fruits 1/2 cup
  • Clarified butter 1/2 cup

Method:

  1. Dissolve sugar in ghee, add khoya and roast it.
  2. When it change its color, then add cardamom powder, mix it and cool it.
  3. Then divide into two portions, add red color food in one portion and give it pan shape.
  4. In end, garnish with dry fruits, cool it and serve.

Ingredients for Mutton Do Pyaza:

  • Mutton 1/2 kg
  • Onion (sliced) 4
  • Yogurt 250 gm
  • Bay leaves 2-3
  • Red chilies 8-10
  • Green chilies 8-10
  • Ginger (chopped) 1 tbsp
  • Garlic (chopped) 1 tbsp
  • All spice powder 1 tsp
  • Big cardamom 3-4
  • Cinnamon 3-4 sticks
  • Black peppercorn 1 tsp
  • Clarified butter 1 cup
  • Salt to taste

Method:

  1. Firstly, put butter in pan, then add big cardamom, black peppercorn, cinnamon and saute it.
  2. Now add pieces of mutton and roast it until golden.
  3. Then add chopped ginger and garlic and roast it for 2 to 3 minutes.
  4. Now beat yogurt, add it and roast more for 2 to 3 minutes.
  5. Now add water as required and leave until mutton tender.
  6. When it tender, add onion slices, chopped all spice powder, green chilies and salt, mix it nicely and cook until salan leaves oil.
  7. Now take out in dish and serve it .
  8. Mutton Do Piyaza is ready.
