Ingredients:

  • Boiled spinach 1-1/2 kg
  • Onion 1
  • Tomato 1 tsp
  • Cumin seeds 1 tsp
  • Garam masala 1 tsp
  • Red chili powder 1 tsp
  • Ginger garlic 2 tbsp
  • Turmeric 1/2 tsp
  • Salt 1 tsp
  • Oil 1/2 cup
  • Chopped green chilies few

For Making Mangodi:

  • Split yellow lentil 3 cup
  • Salt 1/2 tsp
  • Cumin seeds 1/2 tsp
  • Red chili powder 1 tsp
  • Oil for frying

Method:

  1. For making mangodi: Mix split yellow lentil, salt, cumin seeds and red chili powder, add water and dissolve it.
  2. Now make it like pakoray, keep on tray and fry it.
  3. After that, heat oil and fry it.
  4. Heat 1/2 cup oil and do onion brown.
  5. Then put tomato, cumin seeds, ginger garlic paste and salt.
  6. Then put mangodi and roast it nicely.
  7. After that, add boiled spinach and keep on simmer for 30 minutes.
  8. In end, put chopped green chilies.
  9. Palak mangodi is ready.
