Memoni Keri Ka Achar by Shireen Anwer

Ingredients:

  • Keri 1 kg
  • Garlic 100 gm
  • Vinegar as required
  • Guar ki phali 100 gm
  • Green chilies 30
  • Crushed red chili 100
  • Chili powder 1 tbsp
  • Crushed coriander 100 gm
  • Oil 1 kg
  • Onion seeds 1 tbsp
  • Fenugreek seeds 1 tsp
  • Turmeric 1 tbsp
  • Achar ki rai 4 tbsp

Method:

  1. Wash keri with vinegar nicely, dry it and keep it aside.
  2. Now also wash garlic, guar ki phali and green chilies with vinegar. Do not use water.
  3. Then dry keri and all vegetables with towel nicely and keep it aside in clean bowl.
  4. Then mix crushed red chili, chili powder, crushed coriander, onion seeds, fenugreek seeds, turmeric and achar ki rai in dry bowl.
  5. Now mix keri and vegetables in separate bowl nicely, put 1/2 oil in clean jar and add keri and masala.
  6. Now put garlic, guar ki phali and green chilies and put remaining oil.
  7. Mix it nicely with wooden spoon, but do not fill jar full.
  8. Stir like this with wooden spoon for 10 days and use after 15 days.
