Ingredients:

  • Flour 2 cups (240 gm)
  • Oil 2 tbsp
  • Salt 1/4 tsp
  • Water to knead the dough
  • Oil deep frying

Method:

  1. Mix flour, oil and salt into fairly stiff dough with water.
  2. Roll dough very thin (almost translucent) and cut into 1-1/4 inch rounds with cutter.
  3. Heat oil and over high heat, add many rounds as can come in comfortably.
  4. Lower heat to low.
  5. Fry till golden on both sides.
  6. Some will puff up, which you can use for gol gappas/pani puri and rest for papri chaat or sev puri.
  7. Lift of oil, drain on absorbent paper.
