Mushroom Spinach Lasagna by Zarnak Sidhwa

Ingredients:

  • Spinach 1 bunch
  • Mushrooms 1 tin
  • Ricotta cheese or Soft cottage cheese 16 oz
  • Parmesan cheese 5 tbsp
  • Lasagna sheets 12
  • Chopped onion 2
  • Pasta sauce 1 cup
  • Salt & black pepper to taste

Method:

  1. Wash spinach nicely and strain it.
  2. Now heat oil and cook onion and garlic until golden brown.
  3. Then add spinach and mushrooms and cook until water dries.
  4. Now add salt, black pepper and parmesan cheese and cook more for 3 minutes.
  5. Then add ricotta cheese or cottage cheese and remove from stove.
  6. Then boil lasagna sheets with salt water and some oil.
  7. Now strain it, keep big tbsp of mixture on each sheets and close in triangle shape.
  8. Then add pasta sauce, put again in triangle shape and bake in oven for 25 minutes.
  9. Then garnish with grated cheese and serve.
