Double Chocolate Pudding by Zarnak Sidhwa

Ingredients:

  • Caster sugar 1/3 cup
  • Cocoa powder 1/4 cup
  • Corn flour 2 tbsp
  • Salt 1/4 tsp
  • Milk 2 cups
  • Chocolate chopped 4 oz
  • Vanilla essence 1 tsp
  • Unsalted butter 1 tbsp

Method:

  1. Place sugar, cocoa powder, corn flour and salt in heavy saucepan.
  2. Stir to combine.
  3. Place saucepan on medium heat.
  4. Add 1/2 cup milk.
  5. Whisk to combine with sugar mixture.
  6. Gradually add remaining milk and continue cooking whisking constantly, until mixture begins to boil.
  7. Continue cooking for 3-5 minutes till mixture is thickened.
  8. Remove pan from heat.
  9. Add chocolate, butter and vanilla.
  10. Stir until smooth.
  11. Transfer mixture to medium bowl.
  12. Cover with plastic wrap, placing wrap directly onto surface of the pudding.
  13. Refrigerate for at least 2 hours.
  14. Serve with sweetened vanilla bean whipped cream if desired.

Double Chocolate Pudding is yummy dessert. It has texture of double chocolate. It is served chilled.
