Afghani Pulao

Ingredients:

  • Chicken (8 pieces) 1 kg
  • Sela rice 1/2 kg
  • Boiled almonds 20
  • Cashew nuts 10
  • Boiled pistachio 10
  • Raisins 20
  • Coconut slice 2 tbsp
  • Carrot slice 1
  • Whole mix spice 1 tsp
  • White cumin 1 tsp
  • Cardamom powder 1/2 tsp
  • Stock cube 1
  • Oil 3/4 cup
  • Sugar 2 tbsp
  • Carrot slice 2 tbsp
  • Fried onion 1/2 cup
  • Salt to taste

Method:

  1. Caramelize sugar and 2 tbsp carrot and keep it aside.
  2. Heat oil, put whole mix spice, fried onion and chicken and fry it.
  3. Now put stock cube, cardamom powder, salt and 4 cups water, cover it and cook until chicken tender.
  4. Then add soaked rice and cook it.
  5. Fry almonds, pistachio, raisins and coconut slice separate in one pan.
  6. Take out pulao in platter, garnish with dry fruits and caramelize carrot and serve.

Afghani Pulao is delicious & tasty pulao. It is national dish of Afghanistan. The addition of dry fruits & caramelized carrot is wonderful. Try this pulao at home.
