Lucknowi Mutton Pulao

Ingredients:

  • Mutton 500 gm
  • Rice 1/2 kg
  • Yogurt 1 cup
  • Fried onion 1/2 cup
  • Ginger garlic 2 tbsp
  • Chopped green chilies 4
  • Red chili powder 1 tsp
  • Cumin powder 1 tsp
  • Coriander powder 1 tsp
  • All spice 1/2 tsp
  • Mix whole spices 1 tbsp
  • Bay leaf 1
  • Saffron 1/4 tsp
  • Milk 1/4 cup
  • Cashew nuts 10
  • Raisins 12
  • Oil 1/2 cup
  • Salt 2 tsp

Method:

  1. Marinate mutton with salt, red chili powder, cumin, coriander and all spice for 30 minutes.
  2. Heat oil, put fried onion, ginger garlic and green chilies and cook for 2 minutes.
  3. Now add mutton, cover it and cook for 10 minutes.
  4. Now put water and cook until mutton tender.
  5. Heat ghee in other pan, add whole mix spices, bay leaf, cashew nuts, raisins and soaked rice and fry for 2 minutes.
  6. Now put 3/4 cup mutton gravy and mix it.
  7. Put 2 cups water, cover for 20 minutes and cook on low flame.
  8. When meat and rice tender, put saffron and serve with rice.
