Bhuna Hua Gosht


Ingredients 

  • Mutton 500 grams
  • Ginger paste 1 tbsp
  • Garlic paste 1 tbsp
  • Salt
  • Oil as required
  • Potatoes 2
  • Fenugreek leaves dried (saag leaves) 1 tbsp
  • Turmeric powder ½ tsp
  • Garam masala ½ tsp
  • Red chili 1 tsp
  • Fresh coriander for garnish

Method 

  1. Heat ail add ginger and garlic paste saute for 2 minutes. 
  2. Add the meat saute till meat changes color then add the turmeric, red chili powder and salt and cook for another 8 t0 10 minutes. 
  3. Add water and leave to tenderize. 
  4. Once meat is tender and water has dried add the fenugreek leave garam masala. 
  5. Cook for another minutes add the potatoes and toss well. 
  6. Garnish with fresh coriander and serve.

Masalydar fried fish


Ingredients 

  • Lady fish 6
  • Oil for frying 
  • Garlic paste 1 tsp
  • Ginger paste ½ tsp
  • Turmeric powder ½ tsp
  • Red chili powder 1 tsp
  • Cumin seeds 1 tsp
  • Salt to taste
  • Ajwain 1 tsp
  • Mustard seeds 1 pinch
  • Fenugreek seeds 1 small pinch (methi dane)
  • Oil 1 tsp
  • Chaat masala to taste

Method 


  1. Grind fenugreek seeds, mustard seeds, cumin and ajwain. 
  2. Mix all ingredients for the marinade and coat on the fish and leave to marinade in the fridge for 1 hour. 
  3. Heat oil and fry till crisp and golden sprinkle with chaat masala and serve.


Tamatar ka shorba


Ingredients 


  • Tomatoes 1 kg
  • Tamarind paste 50 gms
  • Salt to taste
  • Oil as required
  • Curry leaves 6 to 7
  • Whole red chilies 3
  • Garlic 3 doves crushed


Method 


  1. Boil tomatoes till tender. Allow the to cool and process in the blender until mooth. Strain to remove skin and seeds. 
  2. Add salt to taste and pour back in to the pot and place on the fire for 5 minutes. 
  3. Add the tamarind paste and cook to 10 minutes. 
  4. In a pan add the oil along with the curry leaves, garlic, cumin and whole red chilies place the pan on the flame and allow it to sizzle but do not burn the cumin or garlic. 
  5. Pour on top of the tomato shorba and serve.
