Indian Recipes

Indian cuisine is varied in type and taste as 35% of Indians are strict vegetarians, while other 30% are regular meat eaters that`s why it`s hard to describe Indian culture and their food. But generally one of the common features of Indian recipes is that their food is usually spicy. They made their food from rice, variety of pulses, wheat flour, fruits, vegetables and spices. Depending on their regions their curry is made in ghee, mustard oil, peanut oil, gingili oil or coconut oil. Fish and meat are also the part of their recipes. India is also known as the land of butter chicken, jalebi, pani puri and what not. Their food thali consists of sweet, sour, spicy, bitter and astringent, means six different combination of tastes. Pure Indians serve their food in thali with different combination of food in small bowls kept in it. Every individual has different thali to eat. As per Indian food theory, their meal must have all 6 flavours, not all in one but with one or two standing out. They judge quality of their food with this principle.

Another cultured dish of Indians is dosa, they prepare it in different ways as per their region and culture. India is called the land of spices as 70% of all the world`s spices come from India. No country in the world produces as many varieties of spices as India. Staple ingredients of Indian cuisine are tomatoes, potatoes and chilli, but they are not originated from India, but brought to India by Portuguese. Process of refining sugar from sugarcane was also introduced by Portuguese, before this, honey and fruits were used as sweeteners in Indian food.

Indian food is incomplete without pickles and chutneys with their meals. Similarly their meal course must have sweets or dessert, even their celebrations and ceremonies include a traditional sweet named as payasam, none of the ceremony ends until payasam is served.
