Barbecue Chicken Bits

Ingredients:

  • 1 egg
  • 2 tablespoons milk
  • 4 cups barbecue potato chips, crushed
  • 1/2 pound boneless skinless chicken breasts, cut into 1-1/2-inch cubes
  • Barbecue sauce

Method:

  1. In a shallow bowl, whisk egg and milk.
  2. Place potato chips in another shallow bowl. Dip chicken in egg mixture, then roll in chips.
  3. Place in a single layer on a greased baking sheet. Bake at 400° for 10-15 minutes or until juices run clear.
  4. Serve with barbecue sauce.
