Chinese chicken salad

Ingredients:

  • Sugar 1/4 c
  • Vinegar 1/4 c
  • Salad oil 1/4 c
  • Salt 2 1/2 tsp
  • Brown sugar 1/2 tsp
  • Chicken breasts or thighs cooked and shredded 2 lb
  • Wun tun wrappers (about 30) 6 oz
  • Salad oil for frying
  • Head lettuce; shredded 1
  • Green onion; sliced 1
  • Slivered almonds; toasted 1/2 c

Method:

  1. Combine sugar, vinegar, the 1/4 cup oil, the salt, and brown sugar; mix well.
  2. Pour over chicken, marinate for at least 20 minutes or longer. Heat oil to 375 F.
  3. Place one wun tun wrapper in basket ladle; fit another ladle on top wrapper to hold in place.
  4. Deep fry in hot oil until golden brown; drain. Repeat
  5. until all wrappers are made into mini baskets.
  6. Place baskets on a platter lined with lettuce.
  7. Fill each basket with lettuce, chicken, green onion and almonds. Serve.
